Service Workers and the Restaurant Business

In a discussion earlier in the day our friend Michael Leo of the Strudl Haus, an Austrian cafe, bakery, coffee and wine bar was bemoaning the lack of professional waiters in the Des Moines Metro. He has some interesting ideas of the relationship between a fine meal and excellent service.  We talked about that and more.
